Spatchcock that darn bird or in other words cut the spine out, lay the bird flat and cook it evenly. I guarantee you will end up with an awesome meal that will certainly win you points as an awesome cook. The whole process is super easy. Be sure to set your smoker/cooker/oven at 325F and plan on cooking for about and hour and a half. Always cook to temperature and not to time. Ours finished up in a little over an hour. The breasts need to finish at 165F and the thighs should finish up at 185F. We used a couple chunks of pecan for a nice light smoke flavor. Fruit woods work great too.
