Jack Frost is sure nipping at our noses! Was thinking about lunch at breakfast! Just chatting and doing a little cooking. Split Pea soup recipe FOR ONE follows. Have a great day and stay warm!!! LC (: Split Pea Soup: 1 pint of pre-cooked green, split peas (or 1/2 cup dry) 3 ounces of ham, or kielbasa, or sausage (cooked and drained of fat) 1 15-ounce can low sodium chicken broth 1 teaspoon olive oil 1 small carrot, diced 1 celery stalk, diced 1/3 cup onion, diced 1 medium garlic clove, minced 1 bay leaf 1/2 teaspoon rosemary (optional) 1/2 teaspoon thyme (optional) 1/4 teaspoon curry (optional, but tastes really good!) fresh ground black pepper, to taste salt, to taste If using dry split peas...wash, rinse, cover with water, and bring to boil. Drain water and add fresh cold water to 1 inch over the peas. Bring to boil, reduce heat and simmer for 40 minutes, or until nearly tender. Continue with rest of recipe. Directions for pre-cooked split peas. Saute onion, carrot, celery and garlic in 1 teaspoon of olive oil over medium heat until clear and tender. Add pre-cooked peas, chicken broth, ham, and seasonings. Bring to boil over medium heat, stirring often to prevent sticking. Reduce heat to low and simmer until flavors combine and the vegetables are fully cooked and tender, stirring occasionally; about 35-45 minutes. Season to taste. Makes about 4 cups of soup. Enjoy. (:
