For more cooking videos go to www.youtube.com/youcookonline.com Sample Recipe included in this episode: Low-Fat Tofu Tiramisu Serves 10-12 Categories: Low Fat, Desserts and Sweets Ingredients ¼ cup fat-free egg substitute 1 cup sugar 1 teaspoon vanilla 2 packages soft tofu 1 package silken tofu 1 tablespoon instant espresso powder ¼ cup hot water 1 cup cold water 4 ounces semisweet chocolate chips, finely chopped in food processor 1 fat-free pound cake, cut into ½-inch slices (about 7 slices) 1 (8-ounce) container light whipped topping Preparation In a food processor, combine egg substitute and sugar for 30 seconds. Add vanilla and process 1 minute or until pale yellow. Add soft tofu and silken tofu a little at a time and process until smooth. Transfer mix to a bowl, cover and refrigerate for 1 hour. Dissolve espresso powder in the hot water; add the cold water. Divide chopped chocolate into 3 equal portions. Quickly dip cake slices into espresso water, turning to coat all sides. Arrange slices of cake in the bottom of a 6x17-inch shallow baking dish or similar size dish. Sprinkle cake with first portion of chocolate. Top with all the tofu mixture and spread out evenly. Sprinkle cake with second portion of chocolate. Spread the whipped topping evenly as the next layer. Sprinkle with remaining chocolate. Cover and refrigerate overnight before serving. Other Tofu Recipes: Pan-Seared Asian Tofu Salad with Vitasoy Lemongrass Ginger Sauce Ingredients 1 pound firm tofu ½ cup sesame seeds, plus more for garnish 2 tablespoons cornstarch 3 tablespoons whole wheat flour ¼ cup Filippo Berio Olive Oil 4 cups mixed greens Vitasoy Lemongrass Ginger Sauce 1 tomato, diced Preparation Cut tofu into 1-inch squares. Mix together ½ cup of sesame seeds, cornstarch, and flour. Roll tofu in sesame mixture until well coated. Heat olive oil in skillet until hot. Fry squares until well browned. Drain on paper towels and set aside. To serve, toss the mixed greens with desired amount of lemongrass ginger sauce and mound equally on 4 plates. Arrange the tofu around the greens and garnish the greens with the diced tomatoes and sesame seeds. To serve as an appetizer, place toothpicks in tofu cubes. Arrange on a platter and serve warm with the sauce. Walnut Spinach Pesto: Ingredients ½ cup walnuts 2 cups coarsely chopped fresh baby spinach 8 large basil leaves, torn into pieces 1 medium garlic clove, peeled and coarsely chopped 1 tablespoon soft silken tofu ¼ cup freshly grated Parmesan cheese 2 tablespoons Filippo Berio Extra Virgin Olive Oil Salt and freshly ground black pepper Preparation In a
