Courtney and I eat moogeunji (묵은지) kimchi gamjatang with two close friends visiting from China. In this dish, pork spine ribs, potatos, spices, and an entire head of old aged kimchi are boiled down into a spicy stew. As the kimchi ages, it develops a very sophisticated, sour-tomato-like juice that pops with slight fermented effervescence. This place does it right. The ribs are boiled down with the kimchi, and by the end, a thick beef gravy forms. This is one of the best meals we have had in Korea, and something everyone visiting or living here should seek out to try for themselves.
