Instagram: https://www.instagram.com/mas_vegan/ Plantain Canoe Recipe: Pre heat oven to 350* Ingredients: 2 ripe yellow plantains - Peeled with the tips cut off 3 Cups mushrooms - Cut into small cubes 1/2 Cup diced onion 2 Tbsp soy chorizo 1/2 Tsp Vegan Bouillon + more to taste 1/2 shredded vegan cheese - Topping for plantain canoe **Optional Seasonings** 1/8 Tsp ground cumin 1/4 Tsp black pepper + onion powder, garlic powder and salt to taste** Frying the plantains: In a deep pan or pot, over a medium flame, add enough oil to fry the plantains, ensure the oil is very hot. Fry the plantains whole. Allow all sides to become golden brown and tender, carefully remove and place on a cooling rack or baking dish. Cooking the Mushroom: In a hot pan over a medium heat add the mushrooms and cook until they sweat out the liquid, then add the diced onion, continue cooking. Then add the soy chorizo, stir everything together. Taste it and if needed season with cumin, black pepper, vegan bouillon and other seasonings to taste like onion powder, garlic powder and salt if needed. Turn off the flame. Place the plantain canoes in a baking dish, make a vertical slit/cut down the middle, careful not to cut through the bottom. They should look like little canoes. Fill/stuff the inside of the plantain canoes with the mushroom mix and top with shredded vegan cheese. Place in the oven, cook for 15 minutes **Optional Garnish Diced tomato with sprinkled dry oregano. Also chopped cilantro. #plantain #veganplantainboats #friedplantain #masvegan
