Take your filet and, starting at the tail end, hold the knife perpendicular to the cutting board and cut through the meat until you hit the skin. Make a Holding Flap --------------------------------------------------------------------- 2. Take the knife and get under the meat, cutting it off. You now have a flap of skin you can grip Skin the Roundfish Filet --------------------------------------------------------------------- 3. Gripping the skin flap, place your knife between the meat and the skin, with the blade angled slightly downward toward the skin. 4.
