Chocolate Donuts Chef: Nehal Karkera Prep Time: 1hr 30 minutes Serves: 9 donuts Ingredients: For the Donut Dough ¾ cup Milk ½ cup Castor Sugar 8 gm Yeast 2 eggs 2 tsp Vanilla Extract 3 cup Refined Flour/maida 1 tbsp Oil 50 gm Unsalted Butter 2 whole eggs Sugar Glaze 1 cup icing sugar ½ cup milk powder 1 tsp vanilla extract ¼ cup water or as required Other Ingredients 1 Cup Melted chocolate Edible sprinkles Oil for frying Method: 1. To make the donut dough, in a bowl mix together the icing sugar, vanilla extract & milk, mix till the sugar has dissolved completely. Now in another bowl take the butter, eggs & oil, whisk well add the milk mixture to this & continue to whisk on high speed, to this add the flour & using the dough attachment of the mixer combine well. 2. The dough should be very soft to touch, now on your kitchen counter sprinkle some refined flour & place the prepared dough over it, knead the dough lightly to form a smooth dough, now keep this dough aside to proof for about 1 hour. 3. Once proofed roll out the dough to a ½ inch sheet & cut the doughnut rings from it. Deep fry the doughnut at medium heat till golden brown on both sides. 4. To finish the donuts, either dip them in melted chocolate or pour the melted chocolate over them & drizzle with the sugar icing, finally top with a topping of your choice, here we have used edible sugar sprinkles. 5. Serve warm with coffee 6. Gobble! Gobble! Gobble!
