Cheddar Kimchi Dinner Rolls Cheddar and kimchi? Dinner rolls? Whaaat? Yes, it works. Cheese and kimchi isn’t a new thing, granted it’s usually the processed American cheese slice which is just ooey, gooey creamy flavor but still. Cheese is added to some Korean dishes like ramen and tteokbokki to cut the spice and add a creaminess. It works and it’s good, I swear. Give this a shot and make it your own, I bet if you rolled cooked bacon into the dough it would be a pretty awesome flavor explosion. Ingredients: 2 tbsp of instant yeast ⅓ cup of sugar 1 cup + 2 tbsp of warm water ⅓ cup of oil 1 room temperature egg 3 ½ cups + ½ tsp of salt shredded cheddar cheese chopped kimchi sesame oil Directions: 1. Start by proofing the yeast. Combine the instant yeast, sugar and warm water in a large mixing bowl. Whisk together and make sure the yeast has dissolve. Let it sit to proof. It should be foamy and bubbly after 15 minutes. 2. Add the oil and egg. Whisk. 3. Slowly add the flour and salt to form the dough. Pour the dough out on your surface and knead until you have a smooth ball of dough. Place the dough in a greased bowl, cover and let it proof for an hour. 4. After an hour, the dough should be double in size. Flour your work surface and place the dough, flatten and roll out until it’s about 14” x 8”. 5. Sprinkle on a layer of shredded cheddar cheese, then spread on a layer of chopped kimchi. Roll the long way. Cut into ½” to ¾” inch pieces. 6. Place the cut dough pieces into a parchment lined 9” x 13” pan. Cover and let it rest for 15 minutes. 7. While the dough is resting, preheat your oven to 400°F/204°C. When up to temp, bake the dinner rolls for 15-20 minutes. 8. After the initial 15-20 minutes, carefully brush sesame oil over the top of the dinner rolls and bake for another 5 minutes or until the top is golden. 9. Remove from oven and let it cool down enough so you can handle. Pull apart and serve with dinner! Notes: This is the most basic dinner roll recipe that I know, if you have a dinner roll recipe that you usually use, let me know! Make sure to drain the chopped kimchi so there isn’t too much liquid. I recommend you use a cheddar cheese that you like eating on its own similar to how you should only cook with a wine that you would drink on its own. Don’t have sesame oil?
