So that is exactly what I am preparing for you today! If you don’t want to waste any part of your fish, making a fish stock out of fish leftovers is the perfect solution. Fish stock is ideal as a base for several sauces and soups, and also to poach or steam your fish in. Everyone should know how to make one. Example fish to use: cod, halibut, brill, turbot or dover sole. Example fish not to use: salmon, sardines or mackerel.
