Ааруул хийх явцдаа тараг бүрэх бас аарц хийхийг сурч чадна/While making aaruul we will be learning to make yogurt and aartc at the progress PROCESS IN ENGLISH You will need: - Milk -4L (Fat 2-3%) - Plain yogurt (4% - of milk)- 160 gr - Small amount of cold milk (1/3 cup) - Thermometer - Kitchen cotton towel or cotton (I used cheesecloth but it couldn’t strain aartc) - Enamel big pot - Clamps - Wooden flats Step 1. MAKING YOGURT : 5:17 - Heat 4 liters milk in steel pot until just before boiling (80-90C) - Remove pot, pour hot milk into enamel pot - Let milk stand at 42-45C (107,6-113F)- temperature is very important - While milk cooling down, prepare yogurt starter; - put a small amount of cold milk into big cup and plain yogurt (160gr) then mix and stir thoroughly - Continue to check hot milk temperature occasionally - When the temperature is at 42-45 C add preparing yogurt starter and stir well. - Put lid on the enamel pot, place in a warm location, cover with a blanket and leave it overnight (you can leave it 4-5 hours), (do not open lid or shake because milk is fermenting) - Next day remove the blanket, place pot to another cool location. Do not open lid. - After 20-30 minutes open lid and stir thoroughly - You can keep it in fridge or continue making aartc Step 2. MAKING AARTC : 15:38 - Boil the yogurt 2-3 minutes at medium high. Do not boil any longer. - Set aside it until cool or warm - Use cotton towel or cotton and separate a liquid from solid pieces - Then press the solid part between two wooden flats and use clamps - Fasten or tighten the solid part using clamps - Change the wrapping and make the aartc into good shape after 5-10 minutes (If you only make aartc you can leave changing wrap process) Step 3. MAKING AARUUL : 27:14 - Again press the aartc with clamps and tighten occasionally. Now you can leave the aartc overnight. - Remove clamps and take off cotton cloth from aartc and cut it with knife - Drain cutting pieces on wooden flat and change down side sometimes (dry on sunlight and light wind) - Dry the aaruuls at least 3-4 days. Also, you can use thin cotton string and thread them thru the aartc and hang them at a high place to dry.
