These delightfully tasty lemon muffin is very easy to make. Decorate them as emlings makes great surprise for children. Ingredients: 1. 2 cups self-raising flour 2. 3/4 cup sugar 3. 75g (3 oz) butter 4. 1 cup milk 5. 1 egg 6. Grated ring of 1 large or 2 small lemons 7. Vanilla frosting (purchased from supermarket) 8. Different color fondant 9. Edible confetti pastel confetti, select white color confetti 10. Packet of edible food decorating pens (or use writing icing) 11. White color sprinkles 12. Small round cookie cutter 48mm (1 7/8 inch) or any other to fit top of your muffin Method: 1. Preheat oven to 200C (400F). Line 24-hole mini muffin pan and 12-hole mini muffin pan with mini paper liners and spray with cooking spray (or use standard muffin pan; then it makes about 16-18 standard muffins). Set aside. 2. Place the flour and sugar into a bowl and mix with metal whisk. 3. Melt the butter, add the milk, egg and lemon ring and beat well with a fork to combine. Add the liquids to the dry ingredients and combine only until the dry ingredients have been lightly dampened but not thoroughly mixed. 4. Divide the mixture evenly between 36 prepared and lined mini muffin pans. Bake about 7-8 minutes (standard muffin bake about 10 minutes). Once baked, let cool completely. If you like add small amount of lemon juice or lemon ring to the vanilla frosting, mix together to create refreshing taste. 5. If muffins raise to much slightly level top to make flat top with serrated knife. Spread small amount of frosting. Work with one color of fondant at time. Roll fondant on your working surface (if fondant stick, sprinkle small amount of powdered sugar to prevent sticking. Use small round cookie cutter 48mm (1 7/8 inch) to cut rounds of fondant. Pinch areas to create little ears and legs. Use toothpick to make look like fur. Then adjust all areas to make more look realistic ears, legs, slightly raised top of head. Place flat on top of prepared mini muffin. Place white color edible confetti for the eyes, using water and small brush. Draw eyes pupils on top of white confetti, mouth and eyebrows with edible food decorating pens (or use writing icing fitted with tip 1 or 2). For the purple emling use white color sprinkles to create little teeth and place with clean kitchen tweezers. Repeat with different color fondant. Makes 36 mini muffins. Note: If you like to make lemon crunch muffins as it is without decorating then do not use paper liners; instead well coated with non-stick Chef Mate spray muffin pan and make lemon juice drizzle. To make lemon juice drizzle: Stir together the 1/4 cup lemon juice and 1/4 cup sugar without dissolving the sugar, and drizzle this over the hot muffins as soon as they are removed from the oven. Leave to stand in the pans for only a few minutes after this, in case the syrup hardens as it cools and sticks the muffins to the pans.
