Crab apple and chilli jelly HD
Foraging in the fields again to make some delicious jelly. Below is the ingredients and method. Enjoy! Ingredients: 1kg Crab Apples washed and chopped ( no need to peel or pip) 50g Medium hot red chilli peppers, washed and chopped with seeds in 1.3ltr water White sugar Squeeze of lemon Method: Put the apples and chillies in a large preserving pan, add the water-the fruit should be just floating. Bring to the boil and simmer until the apples are soft and mushy ( about 45 minutes). Strain through muslin or a jelly bag overnight. ( resist the temptation to squeeze the bag as this will result in cloudy jelly). Measure the juice and pour into a pan. For each 570ml add 450g of sugar, and heat gently until the sugar has dissolved. When it has come to the boil, remove and skim off the scum. Squeeze in the lemon, turn the heat back on and bring to a gentle rolling boil until setting point. 105C/220F Let it cool partially, then, pour into warm sterilized jars.
