How to Make Shish Kabobs [Episode 163] HD
I am making Shish Kabobs for dinner with three different meats, chicken, pork and beef in the oven instead of the usual grill. This is a beautiful recipe, and ideal for a low carb meal. I will be preparing 3 kinds of meat, chicken pork and beef… each one of the meat will have a distinctive flavor, the beef will have the BBQ spicy hot flavor, the chicken will have the Asian Lemon and ginger flavors, and the pork will have the Puerto Rican flavor of the sofrito. For this recipe I am not giving specific measurements because it all depend for how many people you are cooking. For the chicken I am using skinless and boneless breasts. I cut each chunk of meat in bite size pieces and I will marinate them overnight separately from each other in big plastic zip bags. You can find a really big variety of marinating sauces in your local supermarket, and all depends what flavors you would like to have. For shish kabobs, it is really important that you marinate them overnight. You want your meat really tender and flavorful. For the pork, I am using uncooked sofrito with a lot of garlic, sweet peppers, culantro, onions and oregano. You can use your favorite sofrito recipe or prepare this one: SOFRITO - In your food processor, blend together 1-onion; 1-green bell pepper; 6-garlic cloves; 3-4 culantro leaves; and 1-tablespoon oregano). And I really recommend the zip bags because it will contain the smell from spreading inside your fridge. To prepare the shish kabobs, I cut in bite size pieces a variety of mini-sweet peppers. You can use green, red, yellow or orange bell peppers; or a combination of all of them. Cut 1-large onion in big pieces. I also have cherry tomatoes and pineapple. Just start inserting the ingredients alternating between the meat and the vegetables until you fill the skewer. Instead of using the grill outdoors, I will be roasting the kabobs in the oven. Pre-heat the oven at 375ºF or 190ºC. And also prepare baking wire racks by spraying them with nonstick cooking spray and covering the baking pan with aluminum foil for easy clean up. Shish kabobs are inserted in skewers; I am using metal skewers which are reusable. But if you are using bamboo skewers, you should place them in water for a couple of hours before using them so they don’t burn with the heat. Shish kabobs are very easy to make, and if you are in a low carb diet, this is an ideal recipe. Have fun making them, because they really have no rules, you can make an entire skewer with just meat or just vegetables… it is up to you. You can also insert mushrooms and corn. Before I place the shish kabobs in the oven, I am going to brush some olive oil over them and also sprinkle some Smokey flavor, and brush hot BBQ sauce over the beef. My shish kabobs are ready to go into the oven for about 30 to 35 minutes or until the meat is completely cooked. After the first 15 minutes I turned them so they cook evenly.
