Ingredients: 6 ounces of dried rice noodles (about 1/4 inch wide) 12 ounces of extra firm tofu 1 and 1/2 cups bean sprouts 2/3 cup pickled ginger (or radish) 4 eggs 3 green onions Sauce: 2 garlic cloves 1 or 2 small chilies 2 Tablespoons sugar 1 and 1/2 Tablespoons ketchup 2 or 3 Tablespoons Tamarind concentrate liquid Serve with additional bean sprouts, chopped peanuts, lime wedges and cilantro (coriander leaf) Serves 4
