How to make fresh Ho Fun 河粉的做法 HD
Ho fun is made by steaming rice powder with water and potato and tapioca starch to create an elastic rice sheet. It is then cut into long strings to make the ho fun. Ho fun use rice powder and water as main ingredient. The addition of potato and tapioca starch gives it strength and elasticity. This enable the ho fun to be more robust and able to be fried in a wok. Ho fun can be used in stir fry dish, as cold mixed or as soup base meal. It has a soft and yet elastic enough for stir fry in a wok. Below is my recipe for making ho fun; it is simple and easy to make. Enjoy! 1 packet rice powder (454g in weight) 150g potato starch 50g tapioca starch Half teaspoon salt Half teaspoon MSG 1.2 litre water Equipment Large pot Tripod stand for steaming. Tray or large plate Cotton cloth Assuming you have the necessary equipment for steaming the ho fun; mix the above ingredients in a large bowl until they are fully combined. Heat the pot until the water boils the turn off heat. Soak the cloth in a large bowl of water. Put large plate on tray on tripod ready for steaming. Place the soaked cloth on the tray/plate fully cover them Pour 1 ladle of rice powder mix onto the cloth, depending on the size of your ladle; it should be about 2 mm on the cloth. Put lid on the pot and steam for 6-7 minutes to cook. Once cooked; flip it on a large chopping board and roll it roll. Cut to the size you want and soak the ho fun in cold water to stop them from sticking together. See video for guidance.
