Vegan Carrot Croquettes HD

These Vegan Carrot Croquettes make a wonderful side dish! They are fantastic next to tofu, seitan, or tempeh. Ingredients: (Makes about three servings.) - five medium carrots - 1.5 tbsp corn starch - Enough panko for breading - salt to taste - 3/4 cup vegetable oil for frying (you may need more) Procedure: - Peel and cut the carrots into cubes of even size. - Place them in cold salt water. - Turn the fire on and boil the carrots until soft. - Drain them when ready. - Mash the carrots thoroughly, add salt to taste if needed. - Add the corn starch, mix well. - Take one tablespoon of the mixture and roll into a ball. - Do the same with the rest of the mixture. - Cover the balls with panko. - Fry them in hot oil until they are golden brown. - Take them out carefully. - Place the balls on a paper bag to remove excess fat. - Serve immediately so they are still crunchy. - Enjoy!!!
