Ingredients Fried Chicken - 4 or 5 Chicken Thigh - 1.5 Cups Buttermilk - Canola Oil or similar for frying Flour Mixture - 1.5 Cups Plain Flour - 1.5 Tsp Paprika - 1 Tbsp Garlic Powder - 1 Tbsp Onion Powder - 1 Tsp Cayenne Pepper - 3 Tbsp Corn Starch - Generous pinch of Salt & Pepper - Brioche Buns - Sliced Pickles - Mayonaise - Hot Sauce - Butter for toasting the buns Directions 1. Place the chicken thigh into a bowl and pour over the buttermilk, making sure the chicken is completely covered. Marinade for half an hour or so in the fridge. 2. In a dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, corn starch and salt & pepper. 3. You can add a couple of spoons of the buttermilk to the flour mixture and give it a mix for a slightly more course and crunchy coating. 4. Remove the chicken from the buttermilk and completely coat in the flour mixture. Shake off any excess flour and transfer to a plate or a rack. Make sure to let the chicken come up to temperature a bit before frying. 5. Once all the chicken is coated, preheat the oil in a large pot or saucepan to 180C. 6. Carefully place the coated chicken into the hot oil and fry for several minutes until golden. Make sure to flip and move the chicken around in the oil occasionally while it’s cooking. Don’t let it burn on the bottom of the pan. 7. Once the chicken is cooked, carefully remove it from the oil and place it onto a rack, seasoning with salt immediately. 8. In a bowl, combine the mayonnaise and hot sauce until you get the consistency and taste to your liking. 9. Gently toast the brioche buns in a bit of butter. 10. Spread a generous amount of mayo onto the top and bottom of the buns, top with pickles, then chicken. 11. Enjoy!
