By Neelima Rawat Patwal ACHARI ARBI | अचारी अरबी – 4 SERVING Arbi or Arvi is one of the oldest cultivated plants and the root is highly rich in starch content besides containing calcium and iron. It has many healing properties that are useful to get rid of many diseases. Achari arbi prepared with spices used for making pickle, has a unique but great taste. INGREDIENTS - ARBI ( TARO ROOTS ) – ½ K.G - ACHAR MASALA – 2 TSP ( IF YOU DON’T HAVE ACHAAR MASALA, ADD ½ TSP OF AMCHOOR POWDER) - TURMERIC POWDER – ½ TSP - AJWAIN – ½ TSP - SALT – 1 TSP OR AS PER TASTE - MUSTARD OIL / REFINED OIL – 2 TBSP RECIPE Firstly rub some oil on your hand, peel and cut Arbi. (Putting oil in hand helps in avoiding itching.) Sprinkle some salt over Arbi & wash it nicely in strainer. Now put oil in Kadai for heating When oil is hot add Ajwain in it & let it crackle Add Arbi in it and mix it well. Stir it well for 2 minutes. Now add Salt & Turmeric Powder and mix well Now add Achaar Masala and mix well Put a lid to it & let it cook for 5 minutes After 5 minutes remove lid and mix well and check the Arbi has become soft or not. (If not then cover it for another 2-3 minutes).
