BBQ Pit Box® ’Comper’-series: • Hot&Fast BBQ-smokers • Medium-weight, extremely effective units • Hybrid of a really good drum smoker & a whole hog cooker • Ideal grate temperature range: 135-145°C • Heavy walls, no insulation, very simple construction • Works with lump wood charcoal or quality briquettes Functions of the BBQ Pit Box® Comper smokers: • Top loading only • Smoking on grate • Hanging • Cooking in pots/ dishes, etc. Characteristics: • Typical hot & fast method. It’s in between low & slow BBQ and roasted meat. • The texture is more firm – so it can be useful for competition. Ideal for Pork, Ribs categories. • Ideal for households as well: it halves the necessary time for a party. • Brisket = 4 hours, Boston butt: 5-6 hours, Pork ribs: 2-2½ hours. Steps of usage: 1. We pour water into the bottom. 2. We light the charcoal in the grate, add smoking woods, and then and place the grate to the bottom. 3. We add the fat-driver element. 4. We add the grate. 5. As soon the grate reached 120°C, we add the meat. 6. By regulating air-intake, we fix the temperature between 135-145°C.
