21 Questions with Chef Matthew Duffy HD
Chef Matthew Duffy started cooking as a kid to pay for school, but kept at it after he graduated. Over the course of his career, he’s toured around the world, cooking at Michelin Star restaurants in Italy, Japan, Spain, Denmark and New York City. He’s learned a lot from his travels… including a new-found love for sourdough bread. Now, Chef Duffy brings that experience (and love for sourdough bread) to Centennial College as the program coordinator for Baking and Pastry Arts Management. In this interview, we ask 21 questions while we take a tour of Centennial College’s baking labs and equipment… including our beloved flour mill! Learn what movie Chef Duffy would like to be cast in, what most people don’t understand about bread, what he’s reading, what his autobiography would be called, what valuable advice has helped to shaped his career, which city has the best bread he’s ever tasted (it’s closer than you think!)… and much more.
