Korean Fried Chicken - Yangnyeom Dak I know I’m not a healthy eater, every day is a cheat day. But the key is moderation. Fried stuff? Yes. Sweet stuff? Yup. Fried, sweet and spicy stuff? Give it. Korean Fried Chicken, or KFC, checks off all three boxes. It’s double fried to achieve that crispy level that borders on ripping up the insides of your mouth. But the sauce, both sweet and spicy, coats the chicken to soften the edges. Here’s a simple KFC recipe that is, in my opinion, pretty mild. If you like tteokbokki, give this a try. Don’t forget to wash this down with a cold glass of beer. Sauce Ingredients: 1 tbsp of minced garlic 1” knob of ginger, rough chopped 3 tbsp of soy sauce 3 tbsp of gochujang (Korean red pepper paste) 1 tbsp of sesame oil 1 tbsp of rice syrup 1½ tbsp of rice vinegar Fried Chicken Ingredients: 1 ½ lbs of boneless chicken (thigh or breast meat, up to you), cut into bite-size pieces ⅔ cup of all-purpose flour 1 tbsp of cornstarch ⅔ cup of water Canola oil, for frying Scallions, rough chopped, as garnish Directions: 1. Start by heating your frying oil. You want a thermometer reading of 350° by the time you are ready to fry. 2. Process garlic, ginger, soy sauce, gochujang, rice vinegar, sesame oil and rice syrup until smooth. Set aside. 3. Combine flour, cornstarch and water in a mixing bowl. Add the prepped chicken, make sure everything is evenly coated. 4. Double-fry the chicken. Working in batches, fry the chicken until golden brown (6-8 minutes). Drain on paper towels. Make sure your oil comes back up to 350° before you fry the chicken again. Fry until crispy (another 6-8 minutes). 5. Drain any excess oil on a paper towel. Put the crispy fried chicken into a large mixing bowl. Pour the sauce over the fried chicken and toss to make sure the sauce coats everything evenly. Garnish with chopped scallions and enjoy!
