INGREDIENTS (Serves approx. 4 adults) 1 box Pad Thai Rice Noodles 1 -1.5 lbs ground beef (or meat of your choice) Green Bell pepper chopped Red or Orange Bell pepper chopped 1 cup sliced white mushrooms 1 medium Zucchini sliced 1/2-3/4 Yellow/White Onion chopped 1 Cup shredded green cabbage (Napa would be best) 3/4 cup shredded carrot (Broccoli, Snow Peas, Baby corn, Water chestnuts, or Bean Sprouts would all be delicious as well!) 1/2-3/4 cup Sesame Oil 1/3 cup soy sauce (low sodium is fine too) Chili sauce 1/2 teaspoon (optional, adds heat) 3/4 teas chopped garlic 1/2 teas sesame seeds (a little extra for garnishing) 3/4 cup Peanut sauce Fresh Lime cut into wedges for garnish & flavor METHOD: Brown ground beef, drain fat and set aside. In another big pot boil water to cook the pad thai noodles. Saute all veggies in same hot pan as meat was browned in. Add a little sesame oil to pan if they look "dry" When noodles are done drain & set aside. In same hot pot make the sauce adding all sauce ingredients except sesame oil, whisk or stir well to combine then add in the sesame oil. Once sauce is combined dump in veggies & meat and stir all until combined. Add cooked noodles and fold all together until everything is well coated. Serve with a garnish of sesame seeds and a squeeze of fresh lime. Enjoy!!
