THE MESS BREAKFAST PLATE ON THE BLACKSTONE GRIDDLE

Try “The Mess Breakfast” on the Blackstone griddle for a delicious stick-to-your-ribs hearty breakfast. Perfectly seasoned crispy hash browns combined with crisp bacon, bell peppers, onions, eggs and cheddar cheese. Served with toast. Shopping List: ½ Lb. bacon 2 cups frozen hash browns ½ large green bell pepper ½ medium sweet onion 2 eggs ½ cup shredded cheddar cheese Hot sauce Kosher salt and course black pepper Directions: First, place the frozen hash browns into a bowl and cover to thaw for about 30-45 minutes. Once thawed, place in a clean dish towel and squeeze out any moisture. NOTE: Frozen hash browns have been par-cooked and are void of starch (if using a raw potato check out the link below for making the perfect diner style hash browns. Follow the steps in the video for removing the starch and moisture. Heat the Blackstone griddle on medium high Chop the bacon and place on the hot griddle. Cook until crispy then place in a paper towel lined bowl and set aside. Leave the grease on the griddle. Cut peppers and onions into bite size pieces and add to the hot griddle and cook until softened. Then add the hash browns to the bacon fat and spread out into a single layer and season generously with Kosher salt and course black pepper and add about 1 tbls. of oil to the top . Potatoes love salt so don’t skimp on the salt. Cook for about 5-7 minutes untouched then flip and cook for about 5-7 more minutes. Once your hash browns have browned thoroughly, add in the bacon, peppers and onions and toss to combine. Next, add the eggs to the top of the mixture and toss again to combine and cook the eggs. Top with cheddar cheese and cover until the cheese is melted and bubbling. Give it a line of hot sauce and serve with toast. Enjoy!
