In a large bowl whisk dry ingredients together: cream butter with sugar and mix. Next add the egg with honey and mix. Next baking soda and spices and mix well. 2. In the end add flour and mix well until the mass becomes homogeneous and will not stick to the hands. 3. Divide the dough in disc and cover each with plastic wrap and in the refrigerator for 1 hour or in the freezer for 30 minuts. 4. Roll the dough between two layers of parchment paper until 1/8 inch (2-3 mm) thick. If you want them crispy roll the dough very thin. If you want them softer roll it out thicker. 5. Cut the dough into desired shapes. Re-roll the remaining dough and cut more shapes. Place the cookies onto the prepared baking sheets, leaving a little space between them. 6.
