A lot of Korean Foods, especially if they’re made with high quality ingredients, are vegan! Doenjang, Gochujang, Soy Sauce, Gochugaru are the base essentials to vegan cooking and these all are naturally vegan. Originally, Kimchi isn’t supposed to have fish sauce but nowadays it does as it provides a strong flavour without having to ferment it for a long time.
