Slow Roast Pork Tacos 2 Anaheim Chilies, Green 2 Poblano Chilies, Green 1 Serrano Chili 1 Bunch Cilantro 3 Cloves Garlic 1 Tablespoon Cumin, Ground 1 Teaspoon Black Pepper, Ground 1 Tablespoon Kosher Salt 2-5 lbs Pork Roast 1-2 Cups Water 1/2 Cup Heavy Cream Corn Tortillas Wash all vegetables well and drain. Split the Serrano chili lengthwise towards stem, but not all the way. Cut off stem and deseed other chilies, chopping into large chunks. Cut onion in half longitudinally and remove outer dry skins. Leave the root on and cut into it 3-4 times making a fan from the root. Smash garlic cloves slightly and remove paper skins. Place all the vegetables into slow cooker pot. Add cumin, salt, pepper and water. Add the pork on top and then the cilantro on top of the pork. Turn on the heat to high for 1/2 hour, then reduce to low. Check pork in 5-6 hours for progress. Cook the meat shorter for sliceable roast, or longer to have it pull apart. When meat is done to your preference, turn off the heat and remove from the pot. Allow it to cool for 10-15 minutes. In the meantime, with a slotted spoon remove vegetables from the pot and place in food processor, blender or food mill. Be sure to remove the serrano chili if you do not want the extra spicy heat, and the root ends of the onions. Blend until smooth. Place the mixture into a pot and bring back to a boil. Adjust the salt to taste. Pour in the cream, and heat through. Do not boil. The cream will break. Sauce can be thinned out using juices in the pot. Cook tortillas as you like, then fill with some meat and top with sauce and a garnish of cabbage or parsley or what every you like. Consume…and try not to eat too many! Enjoy! Tips! Just the tip. Try making rice with the left over juices from the pot. Use normal measurements for cooking rice, but substitute the juice for water. You will be amazed. Also, you do not need pork for this recipe. Use whatever meat is right for your diet.
