Step 2 : Peel and wash your potatoes into a pan, once they reach boiling point, cook them for 6 min. Do not overcook potatoes. Once they are done cool them down completely. Step 3: Prepare your vegetables, cut your onion, garlic and mushrooms. Step 4: Get two pans, place some oil and butter in both. Let them get hot, and then add your chicken breast or thighs into one pan, and add onions with garlic into the other. Step 5: Once your onion has browned, add the mushrooms and cook until all the water has evaporated. Step 6: You want to get a beautiful golden crisp skin on that chicken, so turn it around once its golden. Step 7: Add flour into the mushroom onion mixture, mix well and then add your spinach or any other greens you like. Then add milk and double cream into the pan and season well. Step 8: Take the chicken and place right into the pan, then slice your pre boiled potatoes into disks. Place over the whole pan and cover with cheese. Season well. Step 9: Bake the chicken mushroom casserole for 30-45 min depending on your oven. Step 10 : Serve with some fresh salad or just enjoy on its own. It keeps well in a fridge for 3 days.
