Matcha Green Tea Ginger Snowballs HD

These have a great flavour and are a fantastic addition to a cookie platter. 1/2 vegetable shortening 2 tsp ginger powder or 1 tbsp fresh grated ginger 1 tbsp vanilla extract 1 tbsp green tea powder 1 tsp grated lemon zest 1 tsp baking powder 1/ 2 tsp baking soda 1/4 tsp salt 1 cup brown sugar 2 eggs 2 1/2 cups flour green food colour (optional) Blend the shortening, ginger, vanilla, green tea powder, lemon zest. Blend in the baking powder, soda, salt and brown sugar. Blend in eggs. At this point add in a bit of green food colour if desired. Stir in flour. Form dough into 1 1.5 inch balls and place on a greased/parchment/silicone mat covered cookies sheet about an inch apart. Bake at 350 F 10-12 minutes until bottoms are light brown. Allow to cool and dip in glaze, sprinkle with white sprinkles or nonpareils. Glaze: 1.5 c ups powdered sugar 1 -2 tbsp water, add enough to make a thick glaze that you can dip cookies into.
