Date Night Cook: Perfect Pad Thai HD

Pad Thai is a delicious street food that dresses up well as a date night meal and is very easy to make. Check out the recipe below. Ingredients: 1/2 pack of 5mm wide rice noodles 1/4 cup chopped fresh cilantro 1/4 cup chopped fresh green onion 1/4 cup crushed dry roast peanuts (unsalted) 1 pound of protein (we used shrimp but feel free to substitute anything) 1 cup Pad Thai sauce (recipe below, but this being DateNightCook feel free to use store bought) 1 medium onion (chopped) 3 cloves of garlic (minced) 1 1/2 cup bean sprouts 1 lime cut into wedges Olive oil for cooking Instructions (Pad Thai): Put the wok on medium-high. Add oil to the wok and cook the shrimp. Once cooked, remove and set aside. Put the wok back on heat and cook the onion and the garlic. Do not remove them from the wok once cooked, simply remove the wok from heat. Place the noodles into a large bowl and cover with boiling water until almost cooked (5 minutes). Once the noodles are almost cooked, drain the water and rinse with cold water (use a colander, do NOT soak). Return the wok with onion and garlic back to the heat and add shrimp, noodles, and sauce. Keep constantly stirring and moving the ingredients around the wok. One minute later add the bean sprouts and most of your chopped cilantro. Mix for another 30 seconds then remove from heat. To serve: Divide the Pad Thai between 2 bowls and top with green onion, remaining cilantro, and crushed peanuts. Place a wedge of lime on a side of the dish. Pad Thai Sauce: In a small bowl, mix 1/4 cup fish sauce, 3 tablespoons tamarind juice, and 2 tablespoons of sugar; stir well to melt the sugar. Feel free to add some of the crushed peanuts to kick up the flavor. Taste and adjust flavors to the desired combination of salty, sour, and sweet. Your date will love it!
