Bouillabaisse is a classic French seafood/fish soup. It comes from Provence, on the Mediterranean coast, and especially the port of Marseilles. Fisherman would make bouillabaisse as a way of using up unsold fish and trimmings. Making bouillabaisse is very easy and quick, but making home-made fish stock takes some time.
