Baked Cheese Tteokbokki with Kimchi and Pork Belly 치즈 떡볶이 Everything about this dish makes sense to me. Spicy, cheesy and chewy. It’s essentially a spicy baked ziti dish, but instead of ziti, I swap in tteok. Tteok is such a neutral flavor that it easily picks up the flavors it’s cooked with. It’s safe to say that any dish that uses pasta, you can replace with tteok. Tteok carbonara, tteok bolognese, tteok cacio e pepe, you name it. Here is a simple recipe for baked cheese tteokbokki with kimchi and pork belly. Hope you give this a try! Ingredients 8 oz of pork belly ½ onion, sliced 1 cup of minced kimchi 3 tbsp of gochujang 2 ½ cups of tomato sauce 2 cups of packaged tteok 1 cup of dashi stock 2 cups of shredded mozzarella cheese 1 cup of shredded parmesan Chopped scallions Directions Preheat oven to 350°F. Fry the pork belly until most of the pink is gone. Add the sliced onions and continue to cook until onions have just softened. Add the kimchi and stir so everything is incorporated. Stir in the gochujang, making sure it coats everything. Pour in the tomato sauce. Once it starts simmering, add the tteok and dashi stock. Remove from heat and pour into a 8x8 pan. Cover with mozzarella, parmesan and chopped scallions. Bake for 35 to 45 minutes. Serve immediately. Enjoy! Notes If you are using fresh tteok, bake for 15 to 20 minutes or until cheese is browned and bubbly.
