Leave this to set in the fridge. Step 2: Make The Custard Bring the milk up to the boil with the vanilla pod. Whisk the egg yolks and 32g of the sugar until it is light and fluffy. Pour the hot milk into the egg mixture, return to the pan and cook it on a low heat until it thickens. Once thick, cool it down by pouring it into a bowl set in another bowl of iced water. Step 3: Assemble the Trifle Remove the vanilla pod from the custard, then layer some onto the strawberries and jelly. Whisk the cream with 50g of sugar and a dash of sherry until you have stiff peaks, then pipe or spoon over the custard. Grate over some chocolate and break in some sponge fingers to serve.
