Logo: Dana Van Vueren INGREDIENTS: 1 table spoon - olive oil 2 onions - chopped 3 Medium carrots - chopped 1 table spoon of thyme - chopped 1 liter chicken stock 200 grams fresh / frozen peas 3 table spoons yogurt 1 garlic clove (or a whole garlic) - crushed Juice from 1 lemon PREPARATION: Heat the oil in a heavy-base pan and add the onions, carrots and thyme. Fry for 15 minutes, then add the chicken stock and bring to boil. Let simmer for 10 minutes. Pour 3/4 of the mixture to a separate bowl and puree with a blender stick. Tip back into the pan and add peas, salt and pepper. Simmer for 5 minutes. Finally, mix in the yogurt, garlic and lemon juice and serve in bowls. ENJOY!!! (hum the chorus while you eat...)
