Karaage is a popular Japanese dish, which usually refers to a kind of Japanese fried chicken. Although the name “karaage” means “Chinese fried,” the flavors are very much Japanese. Karaage is most often made with chicken, but you can use any meat or fish that’s prepared using the same ingredients and cooking techniques. RECIPE: 1 Breast of chicken (or meat or fish) soy sauce sake ginger garlic (optional) lemon wedge (or ponzu sauce) Start by cutting chicken in to small, one or two bite-sized-pieces. Thighs are used in most recipes, but you can use breast if you like. Add enough soy sauce to coat all the pieces, then add half as much sake, and about a tablespoon of ginger (if you include garlic, add half as much as ginger). Let it marinate for about 15 minutes. Drain off the excess liquid and coat the pieces with potato starch. Fry the pieces in vegetable oil, much like traditional fried chicken, and serve with a lemon wedge.
