BBQ Beef Ribs Recipe - Smoked BBQ Beef Ribs On An Offset Smoker HD
I cooked these Smoked BBQ Ribs using my Offset Smoker. I used a homemade Memphis BBQ rub on one of the Rib Racks and John Henry BBQ Brisket rub on the other Rack of Ribs. I also used worcestershire sauce as a binder. I cooked the Ribs until they hit an internal temperature of 160ish, spritzing them every hour with pickle juice. When the Beef Ribs hit 160 degrees I removed them from the smoker and put them in a foil pan with just enough peach juice to promote a little steaming action, and cooked until the Ribs hit 193 degrees internal temperature. Once the Ribs hit 193 degrees I applied butter to the savory Beef Ribs and added some melted habanero raspberry jelly to the Sweet Beef Ribs and cooked them until they hit 201 degrees. These BBQ Beef Ribs turned out excellent.
