Coconut Shrimp Recipe - Crispy Fried Appetizer with Lemon Ginger Dipping Sauce Ingredients: 1/2 pound (26/31) shrimp cleaned and dry Oil for cooking Sauce: 1 tablespoon coarsely chopped ginger 1/4 cup lemon juice 1 tablespoon honey 2 tablespoons plum sauce 1/8 teaspoon sesame oil 1/2 teaspoon corn starch (mixed well) 2 tablespoons cold water Bowl #1 Egg wash: 2 eggs mixed 2 tablespoons milk Bowl #2 Dry mixture: 1 cup flour 1 teaspoon salt 1/2 teaspoon white pepper Bowl #3 3/4 cups Panko bread crumbs and 3/4 cups sweetened coconut Preparation: 1. Combine ingredients for sauce except water and corn starch. Bring to a boil and set aside on simmer 2. Mix shrimp in bowl #1, then bowl #2, then back into bowl #1. 3. Coat shrimp on each side ONE AT A TIME in bowl #3. 4. Placed onto wax paper 5. Deep fry in 375 degree oil until golden brown 6. Bring sauce to a boil 7. Add corn starch and water and stir to thicken 8. Pour sauce into ramekin and serve.
